It’s Chinese New Year, which means celebration and, of course, delicious food! For this special occasion, I have a simple yet delightful recipe for Spiced Noodle Soup. It comes from the cookbook Budget Vegan in 30 Minutes by Saskia Sidey, for which I’ve written a cookbook review on ‘Proef het Verre Oosten’.

This recipe for Spiced Noodle Soup (page 87) from the Budget Vegan cookbook, lives up to its promise: it’s ready in just 30 minutes. Not only is it quick and easy to make, but it also boasts a delicious flavor that will surprise you.

I’ve used extra-long noodles to set the mood for ‘longevity noodles’, symbolizing a long and healthy life. So, try not to break the noodles while eating – the longer the noodles, the longer and healthier your life!

The Budget Vegan Recipe
Here’s the recipe with ingredients for two people:
- 2 tablespoons oil
- 1 diced onion
- 2 carrots, diced
- 4 cloves garlic, grated
- 10 grams ginger root, grated
- 1 ½ tablespoons curry powder
- 1 tablespoon vegetable bouillon powder
- 2 tablespoons soy sauce
- 1 liter boiling water
- 150 grams dried noodles
For Serving:
- 2 spring onions, thinly sliced
- A few sprigs of coriander (optional)
- A handful of bean sprouts (optional)

Instructions
- Heat the oil in a large pan and sauté the onion and carrots over low heat for 4 to 5 minutes, until they are translucent and soft.
- Add the grated garlic and ginger and sauté for 1 minute, until fragrant.
- Add the curry powder and sauté for 1 minute, stirring regularly.
- Add the vegetable bouillon powder, soy sauce, and 1 liter of boiling water. Bring to a boil again.
- Add the noodles and cook for 5 to 8 minutes until done.
- Serve the noodle soup garnished with spring onions and optionally with coriander and bean sprouts.
