In today’s VLOG video: we spent our weekend in Eindhoven, where we first arrived at the Sandton Hotel, where we would stay for the night. On day one, we were having a delicious High Tea at Pinkie Patisserie, located at the Stratumsedijk 6 in Eindhoven, where we were treated to delicious luxury sandwiches, tea and sweets.
We had an interview with Judith, co-owner of Pinkie Patisserie. Here’s her story:
My name is Judith and this is my place Pinkie. My boyfriend Ruud started it back in 2012 and now since 2017 I’m with him doing our business. We make everything that’s sweet.
Ruud is doing al the bakings with three other chefs. He also delivers a lot at the moment. He is doing the High Teas for now right here and I do everything around it. I sell everything, I do bridal cake appointments and I do everything else on the side business. Now we’re here at the Stratumsedijk in Eindhoven. The building is really well known in the neighbourhood, it’s monumental. The family of Bosman started here as a pharmacy and now it’s a bakery shop.
All of our pastries are edible, but they’re also like a piece of art. I think that’s what makes us really strong as a patisserie. You see a lot more classic patisseries, but that’s a little bit more old fashion. We are a little bit like a modern version of it.

We really like art and the Van Abbemuseum are our neighbours. They asked us to join an exhibition. There was a Klimt piece (Gustav Klimt) coming to Eindhoven, which was really exceptional. He used to be a big artist. There was a Dutch artist, Bas van Beek, who made the interior around the piece of Klimt. He created some tiles, which were on the walls of the Van Abbemuseum, we made pastries matching with it and then they matched the whole place with the exhibition.
In our interior, the wallpaper, the piece of art that’s on our wall and the jumpsuit are a part of it. Bas van Beek did the wallpaper and then the Van Abbemuseum came to do it here. The rest of the business is Ruud and I. We wanted it to be really cosy, matching our products and then also be really feminine and a little classic.

Our best selling product at the moment is, I guess, our chocolate brownie cake, but also our cheesecake is really popular. We made a carrot cake once for a small restaurant in the city and now we’re very famous for that carrot cake too. This is the mini version of our carrot cake, that’s what we’re really famous of.
The Chocolate Noisette is also really well known. It’s a dark chocolate mousse with hazelnut cream and then a soft bottom.
This is my favorite. Those are called Financiers and they look really innocent, but it’s a really moisty cake made of almond and burnt butter and then there’s marinated cherries inside, which makes it really good.
Then ofcourse our croissants are one of my favorite. It matches. These are the best croissants in town.

Ruud and I got it together, it’s a little bit our version of a wedding ring I guess. We really had a hard time, but there were always croissants on Sunday morning. We introduced the croissants to our shop and they are a really big hit. They are the best croissants in town, so I am really happy. He also has one.
High Tea
In the afternoon, we were going to enjoy a delicious High Tea. Judith came to our table to welcome us. She had a box filled with different kind of teas with her and she told us that they were going to pamper us completely.
The High Tea at Pinkie Patisserie consisted of several courses. We started with a soup with crust stems. Then came a savory round, followed by dessert and a sweet round. The tea was included unlimited, so they brought new teas every time. We could pick the tea that we liked.
The soup.
It was a really nice pea soup. It was a very creamy soup with a basil cream and home made Puff Pastry Sticks. It tasted very fresh and delicious.

The savory round.
We had a platter of grilled cheese, brie cheese, a compote of tomato and strawberry, a crostini with mackerel, a crostini with ripened cheese and truffle cream. It all tasted fresh, crunchy and delicious.

Judith came to our table with her favorites; the Financiers, almond based cakes with burnt butter and marinated cherries in it. Judith had put them in the oven for a while. She told us that, if you let them sit for half a minute, they would be nice and warm on the inside and a little crispy on the outside. We had to try them and after eating them, we understood why they were Judith’s favorites. So moisty and sweet, straight out of the oven. We loved it!
Dessert.
We had a white plate with a beautiful looking dessert on it; an almond cake with raspberry cremeux and a rhubarb mousse with white chocolate cream and red fruits. On another plate we had an apricot muffin, a Breton bottom with pistachio cream, a raspberry cake with rose cream, a chocolate caramel ganache item and a passion fruit caramel chocolate.
All the pieces looked like little pieces of art on a plate, so cute and beautiful looking, that we hardly wanted to eat it. What a feast for the eyes! Luckily we did eat them, because it was a happy delight for us to taste all that sweetness.

We had a wonderful time at Pinkie Patisserie. If you’re looking for a place in Eindhoven where you can have a delicious High Tea, where you can sit on a lovely table in a nicely decorated environment, having beautiful looking, delicious pastries, then Pinkie Patisserie is the place to be.
